Sourdough Course 2017

The Worshipful Company of Bakers announces the Lesaffre UK & Ireland Baking Course: 24-26th October 2017
Lesaffre UK & Ireland (formerly Fermex Limited and DCL Yeast) is the UK’s leading supplier of bread ingredients to the speciality sector of the industry, and the Lesaffre Group is the world’s foremost yeast supplier.

Together with the Worshipful Company of Bakers, they are pleased to be able to offer a special opportunity for a group of students and trainees to travel to the renowned Lesaffre Baking Centre in Lille, France; where they will learn about different types of yeast sourdough production and their applications.

During this short course the students will gain hands-on experience of artisan bread and yeast-raised laminated pastry. They will be making a variety of different breads with sourdough; including Ciabatta, Focaccia, Pain au Levain and learning about different types of yeast that are used for specific purposes. They will also exercise their creative skills by making a range of laminated pastries and taking part in a product innovation challenge.

The students will travel in the late afternoon of Monday 23rd October from Ashford International Station by minibus, through the Eurotunnel, to Lille; and will return to Ashford International Station in the late afternoon of Thursday 26th October.

Lesaffre UK & Ireland will cover the costs of travel between Ashford International Station and Lille; and accommodation and meals whilst in France. Any other incidental expenses will be the responsibility of the student. All students are responsible for ensuring that they have the necessary paperwork for travel to France; including a valid passport, insurance, and visa (if necessary). Students are asked to supply their own bakery whites and suitable footwear: hats are not required in the Baking Centre.

This course is offered to bakery students and trainees in the industry who are over the age of 18 from the UK and Ireland only; and the number of places is limited. The selection of candidates will be at the discretion of the Worshipful Company of Bakers and Lesaffre UK & Ireland and their decision is final. 

Closing date for application is June 2nd 2017: applications received after this date will not be considered.
