The story of bread and its development through the ages

Bread has long been one of the world's most important and nourishing foods. It is made with flour, yeast and water, and baked in a hot oven. Before it is baked it is moistened with water and kneaded (pressed with the hands). Yeast is added and the bread is left to ferment (allowed to rest and rise) before going into the oven.

Flat bread was the earliest form of bread. It is still eaten today in the Middle East, Asia and Africa. By allowing wheat doughs to ferment, the ancient Egyptians discovered this helped produce a light, expanded loaf. They also developed baking ovens. The Romans cooked their bread in small pot ovens over a fire, or large beehive-shaped brick ovens.
